Pancakes, Scrambled Eggs, and Home Fries

Home Fries Close-Up 

Today, I made myself an elaborate breakfast. Cooking at home is definitely better than going out to eat at places like iHop because you have control over the amount of salt, fat, and sugar in your food. In addition, your kitchen is probably cleaner than the restaurant’s kitchen.

The ingredients I used should be enough for 2 people. I made some substitutes for the pancakes though since I did not have any butter or buttermilk. I used vegetable oil in place of butter. In order to make the buttermilk substitute, I put a tablespoon of white vinegar in a one cup measuring cup and then filled the rest of the cup with whole milk. Then, I let it stand for 5-10 minutes. 

For the potatoes, I soaked them in cold water for 20 minutes after cutting them to remove some starch so that it becomes crispy on the outside and fluffy in the inside when I cook them. I also gave my home fries a kick by adding jalapeños and cayenne pepper, but you don’t have to incorporate any jalapeños or cayenne pepper if you don’t like hot foods. For the fruit salad, I kept it simple and just combined various fruits that I found in my refrigerator- kiwi, papaya, and black berries. You can squirt a little honey to the fruit for some more sweetness; however, I omitted the honey.

Pancake (adapted by Foodnetwork.com; yields 6 small pancakes)
Ingredients: (adapted by Foodnetwork.com)
1 cp of all purpose flour
1 tbsp sugar
1 tsp baking powder
Pinch of salt
1 cup of buttermilk
1 egg
3 tbsp of vegetable oil

Instructions:
  1. Mix all the dry ingredients in a big bowl. Then using a whisk or a large fork, mix in the buttermilk, egg, and vegetable until well combined.
  2. Heat a skillet over medium heat and add some oil to the skillet. Pour about ¼ cp of batter to skillet to make a pancake. When the pancake is golden brown, flip to cook the other side. Serve hot with maple syrup. Enjoy!!!


Home Fries
Ingredients:
2 medium potatoes (diced into ¼ inch pieces, soaked in cold water for 20 minutes, and drained)
¼ green bell pepper, diced
1 small red onion, diced
1 small jalapeño, chopped
Black pepper
Salt
Cayenne pepper
Vegetable oil

Instructions:
  1. Heat a skillet over medium heat. Add 1 tbsp of oil. Sauté the bell pepper and onion until tender then transfer them to a plate.
  2. Add 1 tbsp of oil to the skillet. Place the potatoes in the skillet. Use a lid to cover the pan. After 2 minutes, turn the potatoes over and continue to cover the pan for 2 minutes. Repeat until the potatoes brown and become tender. Once the potatoes are about done, mix in green bell pepper, onions, and jalapeños and season with salt, black pepper, and cayenne pepper. Serve hot. Enjoy!!!


Scrambled eggs
Ingredients:
4 eggs
salt
vegetable oil

Instructions:
  1. Heat 1 tbsp of oil on a skillet over medium heat. Add in the egg and use a spatula to scramble the eggs. Cook for about 2 minutes. Serve hot with ketchup if desired. Enjoy!!!
